Cabernet Sauvignon is a red grape variety grown across the globe, in almost every wine producing country.
Its popularity stems from its versatility, it can be blended with other varieties, as found in Bordeaux, or drunk as a single variety. It is a cross between the grape varieties, Cabernet Franc and Sauvignon Blanc and was first established in the 17th Century in France. It is the most planted grape variety in the world with over 840,000 acres.
It is generally a full bodied, high tannin wine with flavours of blackcurrant, black cherry, plum, mint, cedar and tobacco. It cooler climates you will find notes of bell peppers whereas hotter climates will have ripe jammy fruit notes. If the wine is aged in oak it will have notes of vanilla and spice. It pairs well with all red meats, mushrooms, cheese and dishes with garlic or rosemary.
